Healthy Adaptogenic Nut Butter + Date Fudge

Most of us have heard that refined sugar is well, not the greatest. And if you’re on any kind of healing and wellness journey, sugar is usually one of many food groups, if you can call it that, to go. Coming up with healthy, satisfying and tasty treats is no easy feat. Don’t worry, I’ve got one you’ll like. I will warn you, it’s kind of amazing and addictive. I try and not to make this too often because I finish it way too fast.

 

Ingredients

  • 6-8 medjool dates (depends on how sweet you like it)

  • 1 cup of a mix of nut or seed butters of your liking (peanut, cashew, almond, tahini). I currently use a mix of peanut butter and tahini.

  • 1/3 cup of hemp seeds

  • 1/3 cup of unsweetened shredded coconut

  • Coconut milk – add until you reach the desired consistency. A few tablespoons should do.

     

Optional - Adaptogens

  • 1-3 tsps. of Pine Pollen – I really enjoy Sun Potion’s Pine Pollen.

  • 1 packet of Beauty Dust – Moon Juice has a great selection of adaptogen mixes that are quick and ready to use.

  • Or any adaptogen of your choice. Experiment with different ones to suit your needs.

*Some adaptogens are quite strong in taste and might be too strong for the recipe. Pine pollen has little flavor which makes it easy to use.


What Are Adaptogens?

Adaptogens are herbs that help the body adapt to stress, support it’s normal functions, and restore balance. They increase the body’s resistance to physical, biological, emotional and environmental stressors.

Instructions

Blend the hemp seeds and shredded coconut first into a paste like texture, than add the rest of the ingredients.  If you have a good blender or food processor you can probably blend all the ingredients together at once.

  • Blend for several minutes until all the ingredients are blended

  • Store in glass tupperware container and keep in freezer. I like to use a 5 x 7 x 3″ size container.
